INGREDIENTS INFO (SERVES 2)

  • [2x] Fig (55g) Figs, Fresh
  • Handful (10g) Rocket, Raw
  • Medium (150g) Red Onions, Raw
  • Tablespoon Balsamic Vinegar
  • [10x] per spray/0.2ml Frylight Extra Virgin Olive Oil Cooking Spray 190ml
  • [½x] 1 Heaped teaspoon (6g) Demerara Sugar
  • 40g Goats’ Cheese, Soft, Full Fat
  • [2x] Naan (50g) Lidl Rowan Hill 6 Mini Garlic & Coriander Naan Breads 300g
  • 20g Pomegranate, Weighed without Skin

METHOD

  1. Preheat the oven to 200C/180C Fan/Gas mark 6.
  2. Lightly spray a small saucepan with Frylight and set over a medium heat. Add the onions, balsamic vinegar and sugar, cover and cook for 2-3 minutes. Remove the lid and cook until the onion has softened and caramelised.
  3. Place the pitta breads on a baking tray and lightly spray with Frylight.
  4. Spread the onions over the pittas and top with the goats cheese and figs.
  5. Cook in the preheated oven for 10-12 minutes.
  6. Top each pitta with a handful of rocket, sprinkle with pomegranate seeds and serve.
