Beetroot & Feta Salad With Pine Nuts

INGREDIENTS INFO (SERVES 1)

  • 5.0g Lidl Alesto Pine Nuts 50g
  • 80g Serving Lidl Oaklands Duo Colour Gem Lettuce
  • 30.0g Greek Family Farm Feta 200g
  • 15.0g Sainsbury’s Sweet Peppers Red pepper
  • [2x] Baby beetroot (18g) Beetroot, Boiled or Steamed

METHOD

  1. Peel the beetroots and wrap in tinfoil, bake for 15 minutes, place the pine nuts on a dry pan and toast for five minutes,crumble the feta cheese,
  2. Dress the plate with the lettuce leaves then add the beetroot, then the feta and then scatter the pine nuts over the top, enjoy.
