  • 340.0g Frontier Foods Roasted Peppers 340g
  • [2x] Large onion (240g) Onions, Raw
  • [3x] Medium clove (2.75g) Garlic, Raw
  • Tablespoon (6.8g) Smoked Paprika
  • Teaspoon (2g) Coriander, Ground
  • 15.0g Tesco Chipotle Chilli Paste 95g
  • 400.0g Lidl Baresa Chopped Tomatoes 400g
  • Cube (made up) Lidl Newgate 12 Chicken Stock Cubes 120g
  • 5.0g Tesco Light Brown Muscovado Sugar 500g
  • 10.0g Basil, Fresh

METHOD

  1. Tip in the onion and fry over a low heat for 15 mins, until soft and lightly caramelised. Add the garlic, spices and chipotle paste, and fry for 2 mins until fragrant. Add the tomatoes, stock, sugar and the roasted peppers,
  2. Bring to the boil, then reduce the heat to a gentle simmer and cook for 10 mins. Remove the pan from the heat, then blitz the soup using a hand blender. Taste for seasoning and add more chipotle paste, if you prefer a little more heat. Divide into bowls, scatter over the basil,enjoy…
