Mexican Quinoa & Bean Salad

INGREDIENTS INFO (SERVES 4)

  • [2x] 1/2 200g can (drained) Sweetcorn Kernels, Tinned, Drained
  • Medium pepper (160g) Red Peppers, Raw
  • Medium pepper (160g) Green Peppers, Raw
  • Lime (44ml) Lime Juice, Freshly Squeezed
  • Teaspoon (2.3g) Paprika
  • Medium clove (3g) Garlic, Raw
  • [½x] Teaspoon (2g) Cumin, Ground
  • Pinch Table Salt
  • Pinch Black Pepper, Ground
  • [3x] Large sprig (1g) Coriander Leaves, Fresh
  • [12x] Cherry tomato (15g) Cherry Tomatoes, Fresh
  • 250g Lidl Freshona Mixed Beans 400g
  • Pack (microwaved) Lidl Golden Sun Wholegrain Rice with Quinoa 220g
  • Tablespoon (15ml) Aldi Solesta Light in Colour Olive Oil 1L

METHOD

  1. Cook the quinoa according to the packet instructions. Leave to cool.
  2. Add the cooled quinoa to a bowl along with the beans, sweetcorn, tomatoes and peppers.
  3. Create a dressing by whisking together the oil, lime, garlic, paprika, cumin and salt and pepper to taste.
  4. Pour on the dressing, toss thoroughly and serve topped with fresh coriander.
