[2x] Small (41g) Eggs, Whole, Raw
50g White Flour, Self-Raising
50g Wholemeal Flour
150ml Skimmed Milk

METHOD

Sift the flours into a bowl adding any bits from the sieve, separate the eggs and add the yokes and a dash of the milk and blend to a thick paste, add the remaining milk a little at a time till you have a smooth batter. Whisk the egg whites to soft peaks and then fold it carefully into the batter, keeping as much air as you can. Heat a non-stick pan to a medium heat, pour the batter onto the pan and cook till you see the bubbles and then flip and cook on the other side, place on a warm plate to keep warm while you continue to cook the rest, enjoy ..
